Ariel Rubinstein (Tel Aviv, 1951) is an Israeli economist specializing in economic theory, game theory, and bounded rationality.

He studied mathematics and economics at the Hebrew University of Jerusalem as of 1972, where he also received his PhD in 1979 and later became a full professor. He is also a full professor at New York University.
In 1982, he published the paper "Perfect Equilibrium in a Bargaining Model", an important contribution to game theory. The model became known as “the Rubinstein bargaining model.”
